DOLMA by Selin's mom














Malzemeler:                                                Ingredients:
  Yarım kilo yaprak.                                      0.5 kg of grape leaves
  4-5 adet soğan                                           4-5 onions                   
  2su bardağı pirinç.                                     2 glass of rinsed rice
  1/2 su bardağı zeytinyağı.                          1/2 glass of olive oil
  2 yemek kaşığı çam fıstığı.                         2 spoon of pine nut          
   1 yemek kaşığı nane.                                1 spoon of mint
   1 çay kaşığı karabiber.                              1 teaspoon of black pepper
   1 çay kaşığı tarçın.                                    1 teaspoon of cinnamon
   2 adet kesme şeker.                                  2 pieces of cube-sugar
   2 yemek kaşığı kuş üzümü.                        2 spoon of blackcurrant
   1 demet maydanoz.                                  Small bunch of parsley
   1 çay kaşığı tuz.                                        1 teaspoon salt
   1/2 su bardak kaynamış su                        1/2 glass of boiled water


Preparing the mixture:

Heat the olive oil in a deep pot. Add the onion, fry until onion is translucent.Then add all ingredients above. Mix them together and cook for about 5 minutes. Add more spices and salt if necessary after tasting the mixture.
Place a half spoonful of the mixture onto each individual leaf and roll it up, tucking the ends in so that the filling is secure. Lay a couple of large outer leaves on the base of a deep pot, then begin packing the leaves rolls on across the top. Place tight the leaves not to open.

When pot is filled with the leaf rolls, pour 2 glass of boiled water into the pot. And add 1/4 glass of olive oil and half lemon juice. Then finally place on top some plate to cover all the leaf rolls. These leaves will hold in the flavour. Cook it onto low heat approximately 20-30 minutes.
