BOREK (Pan Fried Borek) by Selin


¼ cup Oil (olive oil, or melted butter of your choice)
1 eggs
½ cup of milk
½ cup white cheese/feta
¼ cup parsley
1 large Sheet of Yufka or Phyllo Pastry

 Instructions :
Take a 9-8 inch frying pan and add oil to the pan. Place the full sheet of Yufka centrally over the pan, leaving the edges to hang over the pan.
In a bowl mix, the egg, milk and your ¼ of oil. Crumble your cheese in a separate bowl and chop your parsley and mix through your cheese.
Spread your cheese mix evenly over the bottom of the Yufka, then add in your milk, egg and oil mixture.
Then fold in the edges of the Yufka to cover the top. Fry on one side till golden and flip over and cook the other side until golden.
Remove and serve with Salad or on its own as a snack.
Alternative Tava Borek Fillings:
You can add tomatoes and peppers to the cheese mix (follow instructions above)

Mince Beef Filling:
150 gr mince beef/lamb
1 small onion, sliced

1 fresh onion, chopped
1 small tomato, peeled, chopped
1/4 cubanelle pepper, chopped
1/2 tsp dry oregano
1 tbsp tomato paste
Salt & Pepper


Soften the onions then add in the mince and cook till mince is brown. Then add the rest of the filling ingredients. Cook for about 10 minutes over medium-low heat until the peppers are softened. Put aside and follow the above instructions.
