POTATO PARATHAS (INDIAN BREAD STUFFED WITH BOILED POTATOES) by Sangeeta



















Ingredients :
Whole Wheat flour 2 cups

Boiled potatoes 2

Finely chopped onion ¼ cup

Dry mango powder 1 tsp

Red chili powder ½ tsp
Green chili chopped (optional) 1
Finely chopped fresh coriander leaves 2 tbsp
Salt to taste
Oil / Butter 4 tbsp


METHOD :
Sieve flour with half a teaspoon of salt. Mix with three-fourth cup of water gradually and knead to make smooth dough. Cover with a damp cloth and keep aside for fifteen minutes.
Mash / grate the boiled potatoes. Mix potatoes, dry mango powder, red chili powder, green chili, coriander leaves and salt. Divide dough into equal portions and make balls to the size of lemon.

Roll a portion of the dough into a circle of 100 mm. (4”) diameter with the help of a rolling pin. Place a little stuffing in the centre of the circle. Bring together all the sides in the centre and seal tightly. Roll again into a circle of 150 mm. (6”) diameter circle with a little flour. Heat a non-stick griddle and cook the paratha using a little oil / butter until golden brown spots appear on both the sides. Repeat with the remaining dough and stuffing to make more parathas. Serve immediately with fresh yoghurt. 
You can substitute with stuffing of your choice, use any kind of veggy, cheese, chicken, meat or options of your choice.
