CAULIFLOWER WITH POTATO/ ALOO GOBHI by Sangeeta


Ingredients
  • Cauliflower 1 small
  • Potatoes 2 medium
  • Cumin seeds 1 teaspoon
  • Ginger, chopped fine 2 inch piece
  • Salt to taste
  • Coriander powder 2 teaspoons
  • Red chilli powder ¼ teaspoons 
  • Turmeric powder (Curcuma) 1 teaspoon
  • Garam masala powder/ mixed spices powder ½ teaspoon
  • Oil 1 ½ tbsp.
  • Fresh coriander leaves chopped 2 tbsp
Method

Wash the cauliflower, and separate into florets. Peel the potatoes, halve and slice. You can also cut them into small pieces. Heat oil in a thick bottomed pan. Add cumin seeds, ginger and sauté. Add potato pieces, cauliflower pieces and salt. Mix. Add turmeric powder and mix well. Cover and cook on low heat. The vegetables should cook in their own steam. Keep stirring from time to time. After about ten minutes, remove the cover and add coriander powder, red chilli powder and garam masala powder. Mix and cover again. You can add in half chopped tomato if you like. Cook till the vegetables are totally tender. Serve hot, garnished with fresh coriander.
