ZUCCHINI ROLLS WITH NUTS


















INGREDIENTS:
2 zucchinis
1 glass of cashew (kind of nuts; soaked overnight in cold water or 1 hour in boiling water)
6 tbsp lemon juice
6 tbsp milk
8 dried tomatoes
fresh herbs (basil or parsley)
1 clove of garlic
salt and pepper

  1. Peel the zucchinis, then cut them into thin , long strips. Strips should not have seeds.
  2. Now, prepare the filling. Cashews drain. Next mix altogether cashews, lemon juice, milk, dried tomatoes, garlic, and herbs. Mix to the smooth, creamy mass. Season to taste with salt and pepper.
  3. On each strip of zucchini put teaspoon of filling, spread and roll into a tight roll. Rolls arrange on a plate and put in fridge for an hour. Enjoy!
