INGREDIENTS:
2 zucchinis
1 glass of cashew (kind of nuts; soaked overnight in cold water or 1 hour in boiling water)
6 tbsp lemon juice
6 tbsp milk
8 dried tomatoes
fresh herbs (basil or parsley)
1 clove of garlic
salt and pepper
- Peel the zucchinis, then cut them into thin , long strips. Strips should not have seeds.
- Now, prepare the filling. Cashews drain. Next mix altogether cashews, lemon juice, milk, dried tomatoes, garlic, and herbs. Mix to the smooth, creamy mass. Season to taste with salt and pepper.
- On each strip of zucchini put teaspoon of filling, spread and roll into a tight roll. Rolls arrange on a plate and put in fridge for an hour. Enjoy!
