INGREDIENTS:
- 5 red bell peppers (roasted chopped)
- 2 minced garlic cloves (optional)
- Chopped spinach
- 8 eggs
- 150g Bulgarian cheese or feta cheese (crumbled)
- 4 tablespoons olive oil
- Parsley
- Black pepper, no salt because of the cheese
DIRECTIONS:
- In a pot on medium heat add bell peppers and garlic. Continue to mix for about 5 minutes or until soft.
- Add the chopped spinach and cooked till water disappear.
- Then add all eggs and stir until well mixed. Cook about 5 min.
- Then add parsley and cheese and remove from heat.
