Ingredients:
- 2 Red bell Peppers
- 2 Green bell Peppers
- 2 Onions
- 2 Aubergines
Preparation:
Pre-heat the oven at 190 degrees
Wrap each vegetable individually with tin foil, make sure the tin foil is tightly closed around the vegetable to ensure they cook with their own liquids
Place wrapped vegetables in the oven for 1 hour or until they are soft when you slightly press them with a spoon (the time will depend on the size of the vegetable chosen)
Remove the vegetables from the oven and let them cool down (for a faster cooling remove tin foil)
When they are sufficiently cold you must peel all vegetables and remove seeds from peppers ( do not remove seeds from Aubergines!!)
Place vegetables on a serving plate (please keep in mind that the vegetables will produce some water while standing on the plate, drain water from plate before serving)
Before serving drizzle some salt and extra virgin olive oil on top
