INGREDIENTS:
0.5 kg of carrots
piece of ginger (5cm)
1/2 onion
clove of garlic
100 g of natural yoghurt
0.5 liters vegetable stock
3 tablespoons olive oil
Onions and carrots cut into cubes. In a pan, heat the olive oil, add chopped onion, garlic and grated ginger. After a while, add the carrots and fry. Then mix with stock and boil untill vegetables are soft. Blend the soup, season to taste and put yogurt on the top.
You can sprinkle with pumpkin seeds.
