ZUCCHINI PATE
















ingredients: 
3 cups zucchini (no seeds!) Grated on a grater with coarse mesh (carefully squeeze the juice!) 
1 large carrot peeled and grated 
2 onions, peeled and finely chopped 
5 cloves of garlic, peeled and chopped 
½ cup olive oil or grapeseed oil 
½ cup breadcrumbs 
½ teaspoon turmeric 
1 teaspoon curry powder 
4 whole eggs 
large bunch of parsley, chopped 
chopped fresh herbs: lovage, hyssop, oregano, thyme, basil, dill ... (fresh herbs can substitute dried) 
Salt to taste and freshly ground black pepper 

Preheat oven to 190 - 200 C. 
Fry onion and garlic in oil, to become soft. 
Add freshly ground black pepper and herbs. 
Baking dish, brush with fat and sprinkle with bread crumbs. 
Mix all ingredients and put into baking dish. 
Bake in preheated oven for 1 hour. Enjoy :)
